Racines
Opened in 2007, Racines (meaning "roots" in French) is the brainchild of Pierre Jancou--"cook, restaurant owner, then wine merchant, and finally, importer of natural wines"--and is located in Paris' oldest covered arcade. Jancou's expertise started and remains in the promotion of "extremely natural" wines (meaning that no sulphur dioxide has been added), and Racines is an extension of that love, offering simple French fare and Italian charcuterie to complement the "most natural wine list in Paris."
