Skiing of all forms, snowshoeing, river rafting and kayaking, fly-fishing, hiking, backpacking and mountain biking are all over the state's high country. If traveling via RV, there are many RV campgrounds and parks deep in the Colorado mountains, where you can park and rest after a full day spent playing in the hills.
