Denver's original authentic Vietnamese restaurant also happens to be its only one. Fortunately, its menu features a variety of Vietnamese favorites, from spring rolls, won tons, satays, pork ribs and a range of pho dishes to a seafood selection that includes grilled Mahi Mahi and sauteed shrimp and scallops. Customers generally receive a warm welcome from both friendly staff as well as fresh, warm hand cloths. This small restaurant has low-key decor but a clean, attractive environment. It opens for lunch and dinner everyday except Monday.

Saigon Restaurant in Newark is less than an hour north of Dover and serves a lengthy menu of traditional Vietnamese dishes. These include hot and cold appetizers like dumplings and shrimp salad, pho and mi (rice and egg noodles), and fried rice, seafood, pork, chicken, beef and duck dishes. In addition to the standard Vietnamese and French/Vietnamese fare, part owner and chef Lan Chen is responsible for original and creative items like banana spring rolls with ice cream and lychee sake-tinis. Phở Như Vũ
This small eatery in Bear's Glendale Plaza, just a 45-minute drive from Dover, is dedicated to Vietnam's most ubiquitous dish: pho. A wide selection of these hot beef noodle soup bowls are served along with traditional sides like bean sprouts, chilies, lime wedges, basil leaves and cooked meats. A small range of rice and vermicelli dishes with chicken, pork and beef round out the menu in this small, plainly decorated but cozy restaurant. Phở Như Vũ opens daily from 10 a.m. to 10 p.m. (Sunday until 9 p.m).
