Colorado Springs is an urban oasis in the midst of the scenic beauty of the Rocky Mountains. With varied geological features such as Garden of the Gods, Seven Falls and Cave of the Winds, you could spend days exploring the outdoors around the city. Like most urban areas, Colorado Springs is home to a diverse dining scene with everything from distinctive ethnic cuisine to American comfort food. After spending the day hiking, there's no reason you have to go inside for dinner. The area is home to a number of restaurants that offer patio dining.

Jose Muldoon's

A popular spot with the locals for over 30 years, Jose Muldoon's serves Mexican fare, vegetarian entrees and sandwiches. Dine out on the large patio or have a drink at the indoor/outdoor bar. When the weather gets colder, come inside and relax by one of several fireplaces. Refuel after hiking at Pike's Peak with an appetizer of mesquitos. Jose's is known for this dish which consists of a meat filling of your choice rolled in a flour tortilla with chile con queso and Anaheim peppers. Vegetarians should appreciate menu choices such as the vegetarian taco salad, vegetarian torito and vegetarian enchiladas. Entrée choices range from burgers to a number of traditional Mexican dishes. With such a broad range, everyone in your dining party should be able to find something to enjoy.

Walter's Bistro

Walter's Bistro specializes in contemporary American cuisine. Dine in the cozy, yet upscale atmosphere inside or on the back patio with views of the mountains. If it's drizzling, you won't have to worry, as the covered patio allows you to enjoy the fresh air while protected from the wet. Start with an appetizer of pan-seared sea scallops with sweet corn and lobster succotash or a salad of fresh romaine hearts with Roquefort dressing and spiced pecans. Many entrées feature seafood, including grilled jumbo white shrimp with wild mushroom risotto, romesco sauce and asparagus. Lamb, chicken, pork and beef dishes are also on the menu. Strict vegetarians will find themselves with limited options here and may want to consider other options unless they are looking for desert. Decadent choices include vanilla bean crème brulee with fresh fruit, chocolate lava cake with berry compote and ice cream, and warm rum raisin apple strudel.
