Las Vegas, Nevada, is the world's brightest city from space. Outside the city limits though, the Las Vegas area is just as unspoiled as it was thousands of years ago. Visitors to the area can go hiking in Red Rock Canyon or in the Spring Mountains, kayak or canoe from Hoover Dam all the way down the Colorado River into Arizona, b Bathe in natural hot springs or mountain bike on Bristlecone Pine Trail. There are a couple of raw food restaurants in Las Vegas.

Go Raw Cafe, Westside

The Go Raw Cafe on the westside of Las Vegas serves organic, live, vegan raw food in a traditional cafe environment. Its extensive menu features starters, salads, smoothies, wraps, pizzas, veggie juices, sushi and more. The menu includes cream of carrot and avocado soup, salmon cakes with fries (raw and veggie) and veggies, a raw food lasagna, a portabella mushroom wrap or a Mediterranean pizza. There's also a super juice or a fruit smoothie, along with a shot of wheatgrass. The Go Raw Cafe serves breakfast, lunch and dinner, or you can order your meal to go. The westside location of Go Raw Cafe opens at 9 a.m. every day. They also have a small selection of health and natural food books.

Go Raw Cafe, Eastside

The Go Raw Cafe on the eastside of Las Vegas is the second Go Raw location. Like the westside restaurant, this Go Raw Cafe serves 'living food,--food that hasn't been heated or cooked above 100°F, with every menu item made out of vegetables, nuts, fruit or seeds. The eastside location is larger and also has an extensive salad bar sold by weight, hot vegan soups and a much larger selection of health books, teas, nuts, oils and health products. The menu includes the tropical toast (coconut butter and mango jam on sweet bread), a purple cabbage burrito or salmon' sushi (made with mock salmon). There's also a salad bar. The eastside location of Go Raw Cafe opens an hour earlier than the westside location, at 8 a.m.

Hamada of Japan

For a different kind of raw food, there's Hamada of Japan at the Rio Hotel on Flamingo Road in Las Vegas. The Zagat Guide rates Hamada of Japan as the best Japanese restaurant in Nevada, but what it's really known for is its extensive raw bar. The sushi bar includes raw shrimp, salmon egg, scallop, surf clam, eel, sea urchin, crab roll, dragon roll and cucumber roll. Hamada of Japan is also known for its authentic Japanese saki and its chilled Japanese beers.
