Denver, Colorado has many excellent vegetarian restaurants from which tourists can choose. Denver has over 200 city and mountain parks that provide activities. Many parks have hiking, swimming, boating, fishing, mountain climbing and skiing. Winter Park Resort offers ice skating, skiing, snow shoeing, snow bike trips in the winter months. Recreational boating is allowed on Berkeley and Smith Lakes and Washington State Park.

The Mercury Cafe offers vegetarian and organic food for breakfast, lunch and dinner. The breakfast menu has organic eggs, whole-grain pancakes, omelets, and tofu specials. Coffee, juice, milk and soft drinks are the beverage options. The lunch menu has enchiladas, salads, sandwiches and daily specials, like tofu and vegetables and chicken breast and vegetables. The dinner menu has fresh fish, turkey, spiced chicken, and elk. The restaurant has a large selection of beer and wines, and dessert is available.

Watercourse Foods serves 100 percent vegetarian food for breakfast, lunch and dinner. Breakfast consists of organic eggs or tofu cooked with an assortment of fresh vegetables. Specials menu items are banana bread , french toast, pancakes, breakfast sandwiches and egg dishes. Lunch and dinner have sandwiches and wraps with choices of two sides. Sandwiches use cheese, tofu, tempeh, vegetables whole wheat rolls, rye bread, and tortillas. Main entrees are pasta and vegetables, tofu and vegetables, beans and rice and other selections. Salads are served with bread. Enjoy a good selection of beer and wine. There are fruit smoothies, a large selection of coffee and tea and soft drinks.

Masalaa is an Indian vegetarian restaurant with delicious food that combines spices, color and flavor. The menu has appetizers, soups and salads. This establishment boasts a selection of dosa crepes made with rice and lentil flour. Uthappam are pancakes of lentil and rice batter served with spices, vegetables and sauces. There are steamed rice cakes too. and large selection of vegetarian entrees. Rice dishes come mixed with fresh vegetables and herbs, and stuffed breads. There are Indo Chinese vegetarian dishes, Thai and Mumbai. The restaurant has a children's menu. Juices, coffee and tea are served, as are desserts. Many gluten-free items are on menu, and there are lunch buffets every day of the week.
