Those who enjoy spicy food may wish to consider the Szechuan beef, ginger chicken with string beans or shredded pork with garlic sauce. People who prefer more mild options have many choices including pork with eggplant, tofu with assorted vegetables, or moo shu shrimp.

Located in the heart of the delightful downtown area of Burlington, A Single Pebble offers Szechuan-style Chinese dining in an upscale atmosphere. Once voted "The Best Restaurant in Vermont" by Vermont Magazine, lunch and dinner are served six days a week, with Dim Sum served on Sunday. Tea lovers should enjoy interesting choices such as black lichee, special gunpowder or chrysanthemum tea. Vegetarians have a large offering of selections, including Szechuan spicy cucumber in a garlic, chili and rice vinegar dressing or Genera Chou's Mock Chicken made with seitan, red chili sauce and broccoli crowns. Chef's selections include tangerine peel chicken, black bean salmon, steel pot sha cha beef and barbecue hanging pork.

North Garden Chinese Restaurant

North Garden Chinese Restaurant is located near Red Rocks Park and is an option to consider after a day of hiking. As is common with many Chinese restaurants, this location is closed on Mondays. Start with an appetizer of scallion pancakes, fried cheese or pu pu platter. For those watching what they eat, several lighter options are offered such as steambed broccoli, steamed chicken with vegetables or steamed shrimp with vegetables. House recommendations include sizzling Szechuan beef, sizzling chicken in black bean sauce and shrimp and scallop lo mein. Lunch combinations are offered until 4:00 PM and come with fried rice and an egg roll.
