Wichita rises from a prairie of golden wheat fields and rolling Flint Hills. The mining industry flourished in eastern Kansas during the early 1900s, drawing many Italian immigrants and recipes to the state. In 1958 two inspired brothers, Dan and Frank Carney, opened the first Pizza Hut in a small building downtown. A component of Wichita's culinary scene continues to honor its Italian influences with restaurants to satisfy any palate.

Avivo Brick Oven Pizzeria

Avivo, which stands amid the west side's bustling New Market Square shopping district, has become a hit among the city's foodies. Pizza toppings include portabella mushrooms, sliced Italian sausage, grilled eggplant, Roma tomatoes and Gorgonzola cheese, just to name a few. The menu also offers pastas, paninis and gourmet salads along with wine and signature martinis to chase it all down.

DeFazio's Authentic Italian Restaurant

This restaurant, owned by its chef, Pietro DeFazio, and tucked away among the quiet, mid-century modern neighborhoods that line North Amidon Street, offers traditional southern Italian fare in a quaint, cozy atmosphere. The menu features a variety of robust dishes, such as garlic chicken spiedini, lasagna della casa and steak pizzaiola.

Luciano's Restaurant

Luciano's tagline is "To Italy without a passport." It couldn't be more appropriate. With an ample list of Italian wines and a menu developed by Italian-born chef and owner Luciano Mottola, the restaurant's claim to authentic Italian cuisine goes undisputed. The restaurant and its owner call the suburb of Mulvane home, where Mottola says the nearby fields of wheat and sunflowers evoke his hometown in Tuscany.

Marchello's Restaurant

Marchello's channels south Wichita's working-class vibe though ample portions of Italian food that would satisfy the hungriest factory worker or construction foreman. Regardless, its hearty dishes attract customers from all over the city. The menu features Italian staples such as jumbo ravioli, meat lasagna, fettuccine alfredo and spaghetti with meat sauce.

Savute's Italian Ristorante

Owner Pete Savute's grandparents were first-generation Italian immigrants who used to haul coal from southeastern Kansas to Wichita. In 1944 they noticed a property for sale on North Broadway and so their story began. What evolved was a family-run restaurant featuring the food they'd grown up with, such as beef scaloppini, spaghetti and meatballs and baked chicken cacciatore, plus sizzling steaks.
