Restaurant Guy Savoy
Located in the Caesar's Palace Hotel and Casino, Restaurant Guy Savoy is a recent Las Vegas transplant. It's main restaurant, Guy Savoy in Paris, earned a third Michelin star in 2002. The food here attempts to recreate the experience of the Paris restaurant, using an only slightly modified menu and ingredients that are flown in fresh daily. Guy Savoy, while recognized for all of his expertise, is particularly widely known for his foie gras.

Joel Robuchon
Joel (pronounced JO-ell by those in the know) Robuchon is another Paris transport, and holds the title of "Chef of the Century" as given by a French magazine. Joel owns and operates ten restaurants around the world, including locations in London, Tokyo, Beijing, Macau. This and New York City location are his only two United States locations. The restaurant offers extensive tasting menus. As for all of these fancy French eateries, make sure to dress up if you want to dine.

Picasso
Oddly enough, this French restaurant named for the Spanish painter doesn't incorporate Spanish cuisine into its dishes; rather, the artistic name refers to the exacting artistry incorporated into each dish. Expect beautiful presentations and with prices to match. Picasso is located in the Bellagio.

Bouchon
This less expensive restaurant is located in the Venetian Hotel. It is more of a bistro than a formal restaurant, meaning that you won't be restricted by expensive prix-fixe menus. Modeled after top-class chef Thomas Keller's famous Beverly Hills and Wine Country restaurants, Bouchon prizes high-quality local ingredients. The mussels come highly recommended.
