Cobleskill was settled as a village in 1752 and incorporated as a town in 1868. Located in the Catskills Mountains of New York, the village of Cobleskill is located on the western edge of the town and is surrounded with apple farms and a historical grist mill that served as the foundation of the village for over a hundred years before the town was incorporated.
