Papa Joe's Italian Restaurant
This Brooksville institution has been in business since 1981, and has become something of a Hernando County landmark. Dishes are prepared with real cream and real butter, and most dishes feature Papa Joe's trademark aged Romano cheese, which greatly heightens the flavor of such traditional Italian dishes as lasagna and spaghetti with meatballs. Every day of the week, Papa Joe's offers a different dinner special. Every dinner special comes with a half loaf of garlic bread and your choice of soup or salad. There is an extensive dessert menu, with three different kinds of cheesecake, carrot cake, cannoli, spumoni, tiramisu, baklava and key lime pie all on offer.

Nouvelle Cuisine
Nouvelle Cuisine offers sophisticated fine dining to Hernando County residents and visitors. The specialty is Belgian cuisine from the Bruges region (which is heavily influenced by French cooking.) Duck, monkfish, Chateau Briand, pork and quail can all be enjoyed in a romantic, upscale atmosphere. Unsurprisingly, the wine list is quite extensive. Nouvelle Cuisine is also a good place to try Belgian beers, such as Duvel, Kasteel and Kwak; each type of beer comes in a special glass.
