Embudo is a small historic town located on the banks of the Rio Grande between Espanola and Taos. The town's proximity to the river offers easy access to white water rafting, canoeing and kayaking. Guests can also wander through the town and enjoy the ambiance of a century gone by. The old railway station is a favorite attraction of Embudo visitors. There are several area restaurants where guests can relax between excursions.

Embudo Station

Embudo Station is a moderately priced, casual restaurant located on Highway 68 in northern New Mexico. This restaurant specializes in local comfort food such as ribs and barbecued chicken. Appetizers include deviled eggs, smoked chicken wings, potato skins and baby greens salad. The menu also features numerous entrees, including mesquite smoked chicken, cedar roasted rainbow trout, barbecued pork ribs and hamburgers with bacon and green chiles. Guests can also choose from sides such as macaroni and cheese, green chile polenta, potato salad and mashed potatoes. Embudo Station also offers a long list of wines and beers. Reservations are not necessary.

El Paragua

This restaurant is located just 24 miles from Santa Fe. It features décor influenced by the rich Hispanic heritage of the region. Local favorites include pan fried trout, chiles rellenos, enchiladas de carne and chicken enchiladas. The menu offers a few vegetarian choices, including bean burritos, nachos el piragua and vegetarian tacos filled with potatoes, carrots and broccoli. Guests can also enjoy teriyaki strips, filet mignon or sirloin steak. There is a full bar that serves margaritas, cocktails, wines and beers. Reservations are available but not necessary.

Rancho de Chimayo

Rancho de Chimayo is located in a 100-year-old adobe home overlooking scenic mountain ranges. There is a garden terrace where guests can dine on summer days, and a fireplace where visitors can gather to watch the snow fall in the distant mountains. This moderately priced restaurant serves traditional Mexican dishes such as chile con queso and chiles rellenos, as well as American favorites like rib-eye steak and rainbow trout. Rancho de Chimayo also offers a vegetarian platter which includes a cheese enchilada, a bean burrito, a green chile tamale and Spanish rice. Vegan diners can choose soy cheese. Reservations are recommended for both lunch and dinner.
