How to Make Granola Muffins
Baking granola muffins at home is very easy to do. You can either choose to use store-bought granola for the recipe, or if you are feeling particularly industrious you may even choose to make your own granola for the muffins. Granola muffins are excellent for camping as they are easy to carry around and the granola in them makes for a very filling and healthy snack. Wrap the muffins individually tin foil so that they stay fresh.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:
  • 1/3 cup butter 1/3 cup brown sugar 1 egg 3/4 cup buttermilk 1 cup flour 1 tsp. baking powder Pinch salt Pinch baking soda 1 cup granola
  • 1/3 cup butter

  • Pinch salt
  • Pinch baking soda
  • 1 cup granola
Step 1
Preheat oven to 400 degrees F.
Step 2
Mix together the butter and brown sugar. When they are fully mixed, beat in the egg and stir in the buttermilk.
Step 3
Add the dry ingredients to the bowl and mix well.
Step 4
Grease 12 muffin cups or if you prefer, line each of the muffin cups with a paper liner. Spoon the mixture into the muffin cups until each cup is roughly ¾ full.
Step 5
Bake the muffins in the oven for 15 minutes or until you are able to insert a toothpick inside the muffin and the toothpick comes out clean.
Step 6
Allow the muffins to cool before serving.
